Open Shrimp Party Snack Sandwich



















Ingredients:-

  1. 1 lb semi-cooked shrimp
  2. 1 cup all purpose flour
  3. 1 cup bread crumbs
  4. 3 eggs
  5. 1 tbsp chilli powder
  6. 5-6 leaflets Romaine lettuce, quartered
  7. 2 tomatoes, finely sliced
  8. 1 medium cucumber, finely sliced
  9. 8 nos. bacon strips
  10. 2 medium sized French bread
  11. Extra virgin olive oil
  12. Salt, pepper to taste

Sandwich Spread

  1. 1/2 cup mayonnaise
  2. 1/2 tbsp dijon mustard
  3. 1 tsp white wine vinegar
  4. 1/2 tbsp minced garlic
  5. Salt, pepper, sugar to taste


For the sandwich spread, mix the ingredients in a small bowl before-hand and set aside.

Mix the semi-cooked shrimp with salt and pepper, to taste. Take 3 medium sized bowls. Fill the first bowl with the flour-chilli powder mixture, the second bowl with the eggs whisked together, and the third bowl with bread crumbs. Now toss the shrimp, one by one, into the first bowl, coating well with the flour-chilli powder mixture, then into the second bowl with eggs and then the bread crumbs. Keep aside the well coated shrimp.

Heat a frying pan on medium-high heat and cook the bacon strips until light brown and crisp. The bacon will fry in its own grease and there is no need to add any oil or butter in the pan. Once fried, remove from pan and place on a sheet of kitchen towel for the remaining grease to drain; set aside to cool. Once cooled, crush the bacon strips into small pieces using a rolling pin. Into the same frying pan, add 1-2 tbsp of extra virgin olive oil. Fry the shrimp until golden brown on each side and set aside.

Now slice the French bread into 1 inch slices and toast them in the oven at 350 degrees Fahrenheit for 5-6 minutes. To assemble the sandwich, take each bread slice and coat with the sandwich spread evenly. Place a piece of lettuce, 2 slices of tomatoes, 2 slices of cucumber, few pieces of crushed bacon strips and 2 pieces of fried shrimp. Assemble all the pieces and arrange in a platter. Party snack sandwich is ready!
