- 1/2 cup Extra virgin Olive Oil
- 1/4 cup Parmesan cheese
- 1 tbsp White wine vinegar/lime juice
- 1/4 cup low-fat yogurt
- 1 tsp herbs (dried basil, thyme, cilantro, or blend)
- 1/2 tbsp Dijon mustard
- Salt & pepper to taste
Combine all ingredients in a bowl and whisk until creamy and smooth. Makes 1 cup of the vinaigrette.
Green Salad:-
- 1/2 cup lettuce
- 1/2 cup spinach
- 1/2 cup red cabbage
- 1/2 cup arugula
- 1/2 cup chopped onions
- 1 cup cooked pasta/spaghetti
Mix all the greens with the vinaigrette and pour over the cooked pasta/spaghetti.
Serves: 2
Sides: Chicken crumbsticks (makes a complete meal)
