Herb Parmesan Vinaigrette Salad

Vinaigrette:-
  • 1/2 cup Extra virgin Olive Oil
  • 1/4 cup Parmesan cheese
  • 1 tbsp White wine vinegar/lime juice
  • 1/4 cup low-fat yogurt
  • 1 tsp herbs (dried basil, thyme, cilantro, or blend)
  • 1/2 tbsp Dijon mustard
  • Salt & pepper to taste
Combine all ingredients in a bowl and whisk until creamy and smooth. Makes 1 cup of the vinaigrette.

Green Salad:-
  • 1/2 cup lettuce
  • 1/2 cup spinach
  • 1/2 cup red cabbage
  • 1/2 cup arugula
  • 1/2 cup chopped onions
  • 1 cup cooked pasta/spaghetti
Mix all the greens with the vinaigrette and pour over the cooked pasta/spaghetti. 

Serves: 2
Sides: Chicken crumbsticks (makes a complete meal)
