- 2 lbs shrimp, deveined
- 1 tbsp olive oil
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp orange zest
- 2 tbsp freshly squeezed orange juice
- 1 tbsp white wine vinegar
- 1/4 cup minced dill or chives or coriander or blend
- 2 tbsp chopped red onions
- 1/2 tbsp chilli powder
- Salt and pepper to taste
Whisk together the mayonnaise, sour cream, orange zest, orange juice, white wine vinegar, salt and pepper. Add the shrimp, herbs, onions and mix well. Refrigerate it before serving.
Serves: 2
P.S. This shrimp salad can be used as a filling for a tortilla roll. Makes 2 rolls.
