Ingredients:-
- 2 1/2 cups cooked rice
- 1 tbsp coconut oil
- 2 tsp mustard seeds
- 5-6 curry leaves
- 2 tsp urad dal (skinned and split black lentils)
- Dried red chilli - 3 nos.
- 1/2 cup chopped fresh tomatoes
- 1/2 cup chopped green pepper
- 1 cup non-fat yogurt
- Salt & pepper to taste
- Chopped coriander (optional)
In a sauté pan, heat coconut oil and put mustard seeds and curry leaves in. Allow them to splutter. Then add urad dal and stir until it turns a golden brown. Now add the dried red chilli and switch off the heat and set aside for 5 minutes to cool off. Add the chopped tomatoes and green pepper and mix well. Now add the cooked rice and mix well. Add salt and pepper to taste. Finally add the yogurt and mix thoroughly. Garnish with coriander leaves. Easy fix for the traditional 'thayir-sadam'!!
