Banana Stuffed French Toast

Ingredients:-

Banana Filling

  1. 2 tbsp butter
  2. 1 cup brown sugar
  3. A pinch of cinnamon powder
  4. 1 tsp vanilla extract
  5. 3 bananas, sliced into 1 inch pieces
  6. 2 tbsp cream cheese
  7. French Bread
  8. Whipped cream (optional)
French Toast Batter

  1. 4 eggs
  2. 1/2 cup cream
  3. 1 1/2 cups milk
  4. 2 tsp cinnamon powder
For the banana filling, take a hot frying pan, melt the butter with brown sugar, vanilla extract and cinnamon powder. Stir around for 2-3 minutes until the brown sugar has melted well. Add the sliced bananas and toss around until well coated and tender. Keep aside to cool. Fold in the cream cheese.

For the French toast, make the batter by mixing well the above four ingredients and whisk well.

Slice the French bread into 2 inches thick pieces and slit pockets into them in the middle. Stuff the bread pockets with the cooled banana filling. Dip the stuffed bread into the batter by turning them on both sides. Heat a frying pan on medium heat and fry the dipped bread. Cook each side for about 1-2 minutes, until golden brown (or as darker a color of brown as you like, but certainly not black!). Place the cooked French toast on a plate and pour the remaining banana filling on top. Place a spoonful of whipped cream on top (optional). Serve immediately.

Serves: 2
Sides: Coffee or orange juice
