- 1 Lemon (juice and zest)
- 3 cloves of garlic
- 1 tbsp fresh coriander (chopped)
- Salt, pepper to taste
- 1/2 cup Extra virgin olive oil
In a bowl mix garlic, coriander and lemon juice. Add salt and pepper. Whisk in olive oil.
Salad
- 1/2 cup onions (chopped)
- 1/2 cup tomatoes (chopped)
- 1/2 cup green pepper (chopped)
- 1/2 cup cucumber (chopped)
- 1/2 cup lettuce (chopped)
- 1/2 cup red cabbage (chopped)
- 1/2 cup arugula
- 1/2 cup spinach
- 1/2 cup cashew nuts, pista (roughly chopped)
- 1/2 cup feta cheese (optional)
In a large salad bowl mix the above ingredients. Add in the lime vinaigrette and mix thoroughly. Serve immediately.
